Menu Planing 4/15-4/29

A couple of girlfriends have commented on how I 'organize' my grocery list and menu. Every payday I make a menu for two weeks. I only cook on the nights The Fireman is home. Not that I starve the kids when he is working. LOL We just eat sandwiches or leftovers. We also have what is called "Get your Own Nights" which is nights that the kids cook for themselves. I grocery shop for one week at a time so the produce is fresh. I am trying to be more proficient with coupons although I am in no way like any of the coupon ladies that shop for free. I still spend way too much on groceries.

Now the menu is not laid in stone on the days I will make it. The only day I don't budge on is Tuesdays! Or maybe, it's the kids that don't budge on Tuesdays!

Anyhow..I am sharing my menu for two weeks with you. Forgive me for being a little late.

April 15th Chicken Enchiladas
April 16th Pizza-takeout with coupon
April 17th Chicken with white wine sauce over skins on smashed potatoes
April 18th Homemade Chicken Fingers over Salad
April 19th Chicken Spaghetti (Pioneer Woman Recipe)
April 20th Taco Tuesday! Pulled Pork, Homemade salsa
April 21st Pulled Pork Sandwiches with Coleslaw (leftover meal)
April 22nd Tuna Melts and Home Fries
April 23rd Steak & Artichokes
April 24th Hot Link Spaghetti & Garlic Bread
April 25th Sunday Pot Roast
April 26th My Pesto Pasta & Spinach Salad
April 27th Taco Tuesday Good Ole' fashioned Tacos, Homemade salsa
April 28th Feta Greek Chicken & Roasted Vegetables
April 29th Grilled Vegetable Sandwiches with Garlic mayonnaise

Many ask if I make special accommodations for either picky eaters. I cook meals that I want to cook. There is at least one thing on the plate that each child will eat. I don't force them to eat food they hate. Fortunately they don't hate much. I do keep making foods that they dislike hoping that the smell will grow on them. The Tortured Teenager has started eating Feta if cooked in a recipe and she wouldn't even enter the room before. I take the attitude that if you don't like what I cooked, there is always cereal!

This is pretty much how I do it too. I think planning not only saves my sanity, it saves me money. Hey, have you entered my give away? Only a couple of days left!

I need you to come and organize my life. There is no way I could have a list ready - wow! I am impressed. And there are a few meals I would like to sample...
