Southwestern Pasta Salad


Pasta salads are big in the summer time. They are easy to make. You usually have all the ingredients handy and they feed a army. I make about five different varieties of pasta salads. This one happens to be a crowd pleaser. Some of the ingredients may make you think it is a spicy salad but in fact it is just a hint of flavor. It is not too spicy for children of any age.

Southwestern Pasta Salad

1/2 box of your favorite Pasta
1 cup Red bell pepper diced
1/2 cup Red onion diced
1 cup of frozen Corn (leave if frozen)
2 cups of whatever Vinaigrette you have handy
1 tsp Red pepper flakes
3 peppercinis diced
1/4 cup cilantro leaves chopped (no stems please)
1/2 cup tomatoes, diced (you can put more but The Fireman is not a fan)
1 cup Pepperjack cheese diced
1 tsp cumin

Cook pasta according to the package. Drain and rinse under cold water.

Add remaining ingredients to the pasta

Refrigerate for at least an hour before serving. Stir before serving.

It looks yummy! And anything with Pepperjack cheese has to be good. I'll have to try this for sure! The colors are great and it makes a perfect dish for the 4th! Thanks for the recipe and have a super day!
