Baked Potatoes


There is nothing more heavenly to me than a baked potato baking in the oven. Yes a potato! Not something sweet. So with the smell of baking potatoes, I dont mind one bit going through my spam folder on my emails. I really appreciate all the emails from the Penile dysfunction companies as I must really need it. And the emails offering me Viagra at a discount! Love those! But my favorite, are the letters with the winning lottery numbers or lost inheritance that was suddenly found! Relatives I did not know I had must have suddenly died and left every penny to ME! For a fee, of course! This has been a problem on my comments for my blog too. Suddenly I have to approve all comments because of the lovely comments left on my food blog offering me some great drug at a discount. Lucky me!

Anyways, back to the great smell in the house. Baking potatoes is very easy and can be done in about an hour. Sometimes I bake up extras and use them for Breakfast Scrambles of just serve them the next night.

The elders in my family always covered the potatoes in foil before baking but I find that it just steams them. I could do that just as easily in a pan of water. I prefer to rub them down in olive oil, sprinkle with kosher salt and fresh cracked pepper and bake in a 400 degree oven until a knife can pierce easily.

Once done they have this crunchy outer skin that begs to be eaten. Sometimes, when the Fireman is on duty I will cover the baked potato with chili or cheesy vegetables. An easy meal and easily accepted by my brats.
