Chicken Ranch Sandwiches


I can only get away with making these for dinner when The Fireman is on duty. Don't let me fool you. He wouldn't complain and he would eat them but my guilt gets in the way. He works so hard that I feel I have to provide good hearty meals when he's home.

This sandwich calls for one of those Ranch dip seasoning packets. You know the ones you use to make Ranch dip for gatherings or football games. I try to grab them when they are on sale. They are great to add to Mashed Potatoes or sprinkle over your vegetable before you roast them.

This sandwich is great for making chicken stretch. You don't have to use chicken breasts. I'm using Tenders. My tenders are on the larger side. Two fits on a bun perfectly. I cover with Monterrey Jack cheese. It has to be a mild cheese to not overpower the chicken.

Chicken Ranch Sandwiches
4 chicken breasts or 8-12 tenders (if you are using breasts then consider pounding between plastic wrap so the are not so thick)
1 cup bread crumbs (Panko bread crumbs would be great but my kids prefer bread crumbs)
2 eggs beaten with 1TB water
Pepper for seasoning
1/2 packet of ranch dip seasoning (yes that is my measurement. Save the other half of the packet to make Ranch Fries)
Slices of Monterrey Jack cheese
Hamburger buns
Butter to toast the buns
Lettuce and tomatoes for garnishing (no lettuce for me)

Pour enough oil in a frying pan to cover the bottom. Turn heat on high.
Set up a typical breading station. Egg beaten in a shallow bowl with the TB water. Place the bread crumbs in another shallow bowl. I like to use old pie plates (Marie Calenders!) or old cake tins. Place 1/2 packet of Ranch dip in the bread crumbs. Stir to mix.
Dip chicken in the egg first then the bread crumbs.


Carefully place into the hot frying pan. Turn the heat down to medium high. Fry until both sides are golden brown. They will cook fast.

Place on paper towels.
Butter hamburger buns.

Brown under the broiler. Warning! I like mine toasted!
Place slices of Monterrey Jack on the top bun and place back under the broiler just to melt the cheese

Place chicken on buns and your favorite toppings. I personally like just tomatoes. Bacon would be awesome! I'm out of bacon after making breakfast sandwiches yesterday before a game. Avocados would also be great!

Serve with Ranch fries! (recipe for Ranch fries to post tomorrow)
