Individual Twice Baked Candied Sweet Potatoes

Truth!
I like that sweet potato dish that involves dumping a can of sweet potatoes in a pan, covering with butter, cinnamon, brown sugar and then baking until it screams for marshmallows. Yep I love it!!

Dare!
But my readers don't appreciate it so much. I know you secretly love the original. No judging here. I'll keep your secret!

Here's your alternative! Fresh ingredients. No canned yams. But the best of both worlds. Still has some of the flavors of your childhood but you won't feel so stuck in the 50's. My favorite is the individual serving. Fills my plate so full on thanksgiving that I don't have room for all those vegetables.

Individual Twice Baked Candied Sweet Potatoes
Sweet potatoes
Butter (2 TB per potato)
Cinnamon (1/8 tsp per potato)
Brown sugar (1/2 tsp per potato)
Marshmallows (go crazy!)

Wash and dry the sweet potatoes. Prick with a knife. Bake 400 until tender

Now gut em!! Carefully!!


Mix in all ingredients except the marshmallows and Pecans


Re-stuff the skins and top with Pecans

Top with marshmallows

Bake 350 until topping gets brown

I truly do hate the canned version you speak of, but these look good. I know it's been a texture thing with the canned version, but since I have grown to like the flavor of sweet potatoes as an adult, I may just have to try this. :o)
