Spicy Chicken Salad


Fast is what I am looking for today. I need dinner and I need it now. The kids are busy so it is just us two adults and both of us are having withdrawals from the carbs. I need a potato and STAT!! Alright, I don't need a potato but it would be nice. So the object of tonight's dinner is how fast can I get some food on the plate before The Fireman starts eating all those things that I cant personally eat? And I have to photograph it as I cook....hmmm I have an idea! Let the Fireman help with the pictures so he cant stuff his face with potato chips.

Spicy Chicken Salad

Chicken breasts or chicken tenders. I like 3 tenders per person
Fireman's Seasoning (click on it for the recipe)
salad
cheese
green onions
tomatoes diced
Roasted Chickpeas (Click on it for the recipe)

Take your chicken and sprinkle Fireman's Seasoning on both sides. I love this stuff! Make up huge batches and keep in Tupperware containers. I use it on everything to french fries (which I cant have right now) to meats. Place the chicken in a smoking hot pan that has 1 TB of oil in it.

OK The Fireman could have waited until I got all the meat in the pan to snap the picture!!!
Add to a bed of greens with shredded cheese, green onions, diced tomatoes, and Roasted Chickpeas. I love roasting Chickpeas. They are like nuts when you toast them up. Yummy alternative to croutons.
