Linguica is madly popular here. Slightly spicy sausage is usually seen at BBQ's here. But being that I usually don't follow directions in cooking, you can find it in vegetables, casseroles and my favorite, beans. Once the weather starts to cool slightly, beans are a favorite for me. I can put a pot of beans on the stove, forget about them for a couple of hours and the family can decide to do whatever they want with them. Top them with chips, salsa, avocado, or make a burrito. Sometimes I make cornbread or biscuits to soak up the liquid. Sometimes I grab a loaf a cheap french bread.
Pintos & Linguica
1 small bag of dry pinto beans
1 package linguica
1 onion diced
dice up linguica
rinse the pintos.
Place in your favorite pot
add sausage
and onion
cover with two inches of water
simmer until the beans are tender. Taste and adjust seasoning.
DINNER!!
