Grilled chipotle chicken sausage
I've covered Pork Sausage sandwiches maybe a half dozen times. I've even done Turkey Sausage which is honestly (would I lie?) just as good! But chicken I think is a first on the blog. And they looked spicy as hell in the package so I'm covering with sweet onions that have been cooked slow with brown sugar. Once we tasted them, we realized they were very mild. The Ballplayer almost preferred them to regular hotdogs.
Grilled Chipotle Chicken Sausage
1 extra large onion
1 TB brown sugar
1 TB butter
1 Tb oil
your favorite buns (I like the french rolls)
1 package Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage
your favorite toppings
It's only the three of us tonight so one onion is plenty but if one more person was eating I would use two onions. Caramelizing onions take time. I have to admit I try to hurry the process. I am not a patient person.
I half the onion and then slice
Dump the onion into a pan with 1 TB oil and 1 Tb butter over medium heat. Give a sprinkle of salt and keep and eye on it.
You will need to turn it every five to seven minutes. The Fireman and I alternated who would check on it. Add the Brown Sugar and keep and eye on it. It will eventually get done.
Louie was unimpressed with the process. A nap was in order. H can't have onions after all. He's getting HUGE and he is only 4 months old.
Mind you there are only 3 of us eating dinner tonight and 4 sausages.
30 minutes later and I will have to hide the evidence!
These babies will grill up fast. In fact I am grill them while the guys are in the batting cage. That's life with The Ballplayer!
