This isn't even a recipe as it is a "throw it all together" meal. In fact I text messaged The Tortured Teenager a quick grocery list (she had my card for getting gas. Relax. I trust her!) and dinner was waiting on the counter once we got home from The Ballplayer's baseball game. That easy. Promise! I am using reduced fat cheese, tortillas and sour cream. So these tacos are around 350 calories for one. Add a salad and call it dinner!
Easiest Chicken Soft Tacos
1 rotisserie chicken (remove skin)
1 pack of low fat tortillas
reduced fat cheese
1 can low fat refried beans
homemade salsa
low fat sour cream
Mind you, dinner was waiting on the counter (cold) so I assembled each taco with the cold (not that cold) ingredients
Pop each taco into the micro for 30 seconds and eat!
The Ballplayer likes to roll his up!
