I am starting my fall recipes. It's
almost the middle of October. Halloween is approaching, which means
that Thanksgiving is right around the corner. (that scares me...Christmas is approaching too fast) I made this little gem of a
dessert in the summer and couldn't stop eating it right out of the pan.
So plan on making a ton. If you are dieting (as I am) you can buy the
reduce fat crescent rolls and I have heard of using diet soda although I
also hear conflicting reports about cooking with it. So maybe the old
story of eating in moderation is the golden rule. Although, I am warning
you, it was really hard with this recipe and I am not even a sweets
girl.
Easy Apple Dumplings
recipe adapted from The Country Cook
Ingredients:
1 Green Apple (Granny Smith or Golden Delicious)
1 tube (8 oz.) Crescent Rolls
1 stick unsalted butter, melted
3/4 cup sugar
1/2 teaspoon vanilla extract
Ground Cinnamon (to taste)
1/2 cup lemon lime soda (Sprite or Mountain Dew work good)
The Country Cook's Directions:
Preheat oven to 350F degrees
Peel and core apples. Cut apple into 8 slices.
Unroll tube of crescent rolls and separate into 8 pieces.
On each roll, sprinkle with a bit of cinnamon.
Add one apple slice.
Roll it up in a nice little bundle. Continue with next 7 rolls the same way.
Spray an 8-inch square pan with nonstick spray.
Place all 8 dumplings into baking dish.
Mix together melted butter with sugar and vanilla.
Pour butter mixture on top of crescent rolls.
Now take soda and pour it around the edges of the crescent rolls.
Sprinkle tops with a bit more cinnamon.
Bake in preheated oven for about 35-40 minutes.
Serve with whipped cream or ice cream.

if you haven't given this cinnamon a try, you really should if you get
a chance. It goes by many names but it is cinnamon from Vietnam. It is
sometimes called Vietnamese Cinnamon or Saigon Cinnamon. You can
probably find it your major grocery store chains now. I found this at
Walmart.
It has such a great concentrated cinnamon flavor and I am hooked on it now. I just love to use it to make homemade applesauce.
It really makes a big difference in taste.
Start with an apple. Just one. This is off my apple tree. I grabbed two just in case it was yucky inside
Slice into eight slices
separate your crescent rolls. I probably should have sprinkled a little flour on the board but it all worked out ok
Sprinkle some cinnamon on each one. Now the Blogger recommends a special one and I opted for the "special" one I already had in cheap bulk in my cupboard. Do as you see fit.I was put quite a bit on them too
Now place you apple slice on each crescent triangle. I had extra apple so mine got extra

Put them into a baking tray. Really I could have used a 8x8 or 9x9 tray. The 9x13 was over kill.
Now melt one cube of butter
Add sugar and vanilla to the melted butter
Now pour the melted butter mixture over the dumplings
I never have soda in my house. Well, that is a lie. I have Mexican Coke in the bottle for mixed drinks but I never have canned soda in the house. So I grabbed this.

Bake 350 for 40 minutes. Now when it comes it it will seem like there is too much "liquid" in the pan. This freaked me out and I scooped it out. It does "set" and "settle down" but it did make me wonder if I could make it with less butter next time. Just food for thought
