
When I was a little girl, my grandpa would take me to Arby's for Beef n Cheddars. Oh my, they were so good, and cheap. I took my son for the first time over summer. Those suckers were expensive. I remember them being two for a dollar if not cheaper.
It was another hot day here so I decided to toss a Chuck Roast in my crock pot. Boy was I glad until I turned on the broiler to melt the cheese. Sometimes I just dont think. Oh well, they were so good!
Beef n Cheddars
Combine the following in a small bowl
1 TB smoked paprika
1 TB garlic powder
1 TB oregano
1 tsp kosher salt
1/4 tsp cayenne
1/2 tsp sugar

Mix together and sprinkle all over the roast. If you get it on the counter, it's extra points! Rub in with your hands.

Heat about 2 TB oil in a pan. Brown all sides of roast. Place in the crock pot.

Cook about 3-4 hours on high or 6 on low. Pull out of the crock pot and shred with a fork.

Stick buns under the broiler. Toast up (careful to not burn, speaking from experience) Now place meat on one side of the bun and cover with cheddar cheese. I cut mine a little thicker than you would for hamburgers. I actually want it oozing cheese. Stick back under the broiler till melted.

I served with Watermelon which was perfect for the weather.

Great recipe I will have to try as I just bought a new slow cooker. I had to laugh ~ "watermelon perfect for the weather." It was 47 degrees here this morning...
