Zuppa Toscana Soup


I feel like I have been covering soups a lot lately but I am sure that there will be a heat wave on the East Coast in no time and it will happen when my soups are scheduled to post.  I have a couple readers back East and it never fails that when I post cold weather food it is warm there. Or I will schedule it to post here and we will finally get a heat wave here. Ok that is just foolish talking. I really need to stop drinking wine and blogging. Sorry. Back to the recipe. Zuppa Toscana! Probably my favorite soup when I frequent a certain Italian restaurant. You already guessed right? I love it! It has my favorite vegetable...Potato! Shhhh I like to think it is a vegetable! This soup has spicy Italian sausage and a creamy broth. It's to die for good. I serve mine with toasted croutons on top. That certain restaurant doesn't. They should. It is so much better. Try it. You'll agree!




Zuppa Toscana Soup

1 lb. spicy Italian sausage
1 qt. water (4 cups)
2 cans chicken broth
4 small russet potatoes scrubbed clean halved and sliced
2 or 3garlic cloves minced
1/2 med. onion diced
2 cups chopped kale
1 cup heavy whipping cream
salt and pepper – to taste

To a big stock pot add 1 pound of spicy Italian sausage (get the hot stuff) add one diced onion and 3 cloves garlic. Brown over medium heat until completely cooked. Drain meat. This is a step I completely forgot and you will completely notice it. It didn't affect the taste just the look
Scrub clean about four potatoes (maybe more maybe less depending on size)
I don't own a mandoline slicer. Its on my list of things to buy. Slice the potatoes the same thickness. My picture doesn't do justice but you want them pretty thin.
Add to the pot with the cooked meat.
Add the 2 cans of chicken broth. Always go with low sodium. The pork has plenty of salt.
Add 4 cups of water
this is where you can see I didnt drain the meat. OOPS
Add the Kale. Mmm yummy healthy kale. I love kale. My son....not so much.
Simmer over medium heat until the potatoes are tender (about ten minutes)
Time to add cream! Stir and serve! I am serving with homemade croutons and a homemade salad that rivals Olive Garden. They have nothing on me!
DINNER!!!
