It takes a lot of sugar to get on any favorite list of my son's. That being said you have been warned. This recipe has a ton a sugar in it. It is amazing. My son loves it. He has no idea that the green specks came from my garden. (yes this post is just a tad bit late getting to the blog...) Ballplayers FAVORITE Zucchini Breadrecipe adapted from Allrecipes3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
Preheat oven to 325 degreesGrease and flour two 8 x 4 inch pans. Put all the wet ingredients in a bowl. Yes, I admit it. I am rather the anti baker. So if the recipe does this long drawn out thing, I have to admit...out the window it goes. So basically the rule is wet in one bowl, dry in another.
Beat eggs, oil, vanilla, and sugar together in a large bowl, if that was too simple for you.

Mix well and distribute into the pans

Bake 40-60 minutes (you will be taking the small ones out before the larger ones) I use a tooth pick to check if it is done

There is bit of a dispute between which topping is the best. I like apple butter if I have any. The Fireman likes butter and make sure it is thick.
