Roasted Artichoke Hearts


I am in love with Trader Joes! If you don't have one, I am so sorry. For the longest time the closest one was in a neighboring city about 25 minutes away. Once a month we would go there and stock up on all the yummy stuff they offer that you can't find in our grocery store. A couple years ago one opened up here and I have been singing it's praises ever since. Whenever I find these frozen artichoke hearts, I buy all that the freezer case has (usually only a couple) because I love to roast these for a side dish or even dinner if The Fireman is working (remember I eat strange according to my kids) But trust me you will not love this for how easy it is but how quick it is!
Roasted Artichoke Hearts
All you need is one
1 bag of frozen artichoke hearts
1/2 lemon
olive oil
garlic powder
salt and pepper
My pans are ancient so I spray with cooking spray (insurance as we call it in this house) and then drizzle with olive oil. Dump the artichoke hearts on the pan. Salt, pepper and garlic powder them. Go as light or heavy as your heart desires. Get creative and use a different spice even.
Drizzle 1/2 a lemon over them
Roast at 425, flipping when golden
I like them golden on both sides, the darker the better
I'd be happy with this for dinner with shaved Parmesan over it and a glass of wine.
But tonight we are having them with steak and Truckstop potatoes
