Sausage and Lentil Soup

The way to this girl's heart is through kitchen utensils of any kind. Although I recently dropped my beloved iphone and am seething over it still... Siri can you hear me? No kitchen items are still my favorite. My Sweet Fireman bought me my first Le Creuset pot. I have been secretly wanting one for quite some time. He knows that I am completely in love with my cast iron pans and these are enameled which makes them great for making soups and stews and pots roasts. They last forever. The Torture Teenager will have them passed down to her someday. My father's girlfriend has one from her mother.

So tonight's meals is to break in the pot. I think Sausage and Lentil Soup is perfect. It has been chilly at night. Or at least I think it has been. I am always cold.


Sausage and Lentil Soup
1 package mild Italian sausage
1 TB olive oil (I didnt use but if needed for the sausage)
1 tsp cumin
2 carrots diced
2 stalks celery diced
1 small onion diced
2 cloves garlic diced
1 TB tomato paste
1 cup lentils (1/2 package)

Take 1 pound of Mild Italian Sausage and brown on medium. I didn't add any olive oil since it usually is fatty enough.

While the meat is browning chop your veggies
Add the veggies to the pot, even it the meat isn't done and continue cooking. Add 1 TB Tomato Paste to the pan once the meat is cooked. I love that tomato paste in tubes
Add 1 carton chicken stock and 1 quart water. Add 1 tsp cumin. Add 1 cup Lentils
bring to a boil and let simmer about 45 minutes.
Taste and make sure it doesn't need salt or pepper
DINNER!

I am completely the same! Kitchen Utensils of any kind give me butterflies ;)
The soup looks great and I love the pot.
