Texas Cavier

Momma Zirschky's Texas caviar

I've been meaning to make this for months. But every time I think I'm going to make it, something came up. But today we have leftovers for dinner. I love when that happens. I can make an appetizer for lunch on the weekends. Baseball almost got in the way but I'm determined to get this made. I have all the ingredients. Well almost. I had to send The Fireman to the store. My blackeyed peas were expired. Whoops. Proof I don't use many canned items I guess. Or rather that one. So I'm sitting, waiting, wondering what else he will buy. Because you know how men are in a grocery store without their wives. Or at least this one.



1 Bell pepper (chopped)
1 tsp salt
1tsp pepper
1/2 tsp garlic powder
6 Tbsp olive oil
6 Tbsp vinegar
3 avocados
1can black eyed peas (rinsed)
1 can shoe peg corn
2 Avocado's (peeled and chopped)
2 tomatoes (firm & chopped)
1 onion (chopped)
1/4 cup cilantro
1 Jalapeño pepper
1/8 tsp cumin

And the seasons and the oil and vinegar mix separate in a bowl or something and pour over all of it

ok so this is super easy!! just chop and drop in a bowl
I only did one jalapeno since the recipe called for one and I seeded it to be on the safe side but I could have left the seeds in. Our family likes it hot and it makes a huge mixing bowl
I used way more cilantro than what was called for. Being that we are in cilantro country and it is in everything we eat we are used to the flavor
so pretty in the bowl
Now mix up the dressing
Pour over everything
Mix well
And Enjoy!! The Fireman loved it so much he said he would love to serve chicken over it!!
