Beer Marinated Tri Tip

I think it pretty much has been established that I enjoy cooking with beer. Give me a reason to cook with it and I am there. I happened to pick up a small tri tip and thought the obvious "let's marinate it!" Marinating beef, I have found is better the longer it has. Mine only has about 5 hours which is better than nothing. But overnight is definitely better. My marinates can range from simple to everything in the kitchen sink. But this is my pretty standard marinate. Usually I use cheap beer we have on hand but anything will work.


Beer Marinated Tri Tip

1 large tri tip
1 bottle of beer
1/4 cup minced onion
3 cloves garlic minced
2 TB Worcestershire sauce
2 TB Dijon mustard

You are not going to need the whole onion. just about a 1/4 of it
love how garlic flavors beer
add everything to a large zip lock bag. Add the beer.
I dont bother measuring the Worcestershire sauce. just shake...and shake..
two really healthy squeezes of Dijon. again I don't measure.
Grab the bag and give it a good mix
add the meat.
I stick in a platter that eventually I will serve in. The bag will keep the liquid in. Everytime someone goes to the frig the turn the meat. No matter how many times, it makes a difference.
Alright, I'm not going to tell you how to BBQ. Lord knows I get in trouble for telling The Fireman how to BBQ (I do a better job) but I like to cook it low and slow. It takes about 45 minutes to cook. And I know my camera shows black, but that is well sought after bark.

We fight over doneness in this house. I like the meat to moo at me. The Fireman, well he likes it like leather. Marriage is a compromise so I guess I sorta win...Three more cuts and it it will be medium.
