Ballplayers FAVORITE Zucchini Bread

It takes a lot of sugar to get on any favorite list of my son's. That being said you have been warned. This recipe has a ton a sugar in it. It is amazing. My son loves it. He has no idea that the green specks came from my garden. (yes this post is just a tad bit late getting to the blog...) You can thank The Twin's Mom (sorry everyone has a moniker and yours seems perfect) who got the recipe from Allrecipes.


Ballplayers FAVORITE Zucchini Bread
recipe adapted from Allrecipes

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini

Preheat oven to 325 degrees

Grease and flour two 8 x 4 inch pans. I personally like to use 1 large pan and 2 small pans I scored off crate and barrel for nothing one year.
Put all the wet ingredients in a bowl. Yes, I admit it. I am rather the anti baker. So if the recipe does this long drawn out thing, I have to admit...out the window it goes. So basically the rule is wet in one bowl, dry in another. Beat eggs, oil, vanilla, and sugar together in a large bowl, if that was too simple for you.
Flour, salt, baking powder, soda, and cinnamon together in a bowl.
Wet....and Dry
grate the zucchini
ya you have to actually measure it out
Combine
Yep this is actually how I got the recipe. This is why I started the blog. I had a 3 inch binder (which I still have) that was stuffed with recipes that I was saving to try or that were important for to me. Now these paper are on the blog

Add the "green specks" The Ballplayer never asked what it was.
Mix well and distribute into the pans

Bake 40-60 minutes (you will be taking the small ones out before the larger ones) I use a tooth pick to check if it is done
Let cool before removing from the pan
There is bit of a dispute between which topping is the best. I like apple butter if I have any. The Fireman likes butter and make sure it is thick.
