Butterscotch Pumpkin Cupcakes

Some of the best recipes I make come from my friends or family. I got this one from my dear friend BMO from Utah. She's my Boxer Momma friend. She was torturing us one night on facebook with these cupcakes and I knew I had to try this recipe and oh....I was right! This one is a keeper! You will make this one year after year. Your family will beg you asking when you will make them again and again. I was a little afraid making these. There is only a couple ingredients. In fact, there are no eggs...no oil...no water. And the water threw me for a loop. I was concerned. I was downright freaking out. But these were amazing. The only thing I would do different is double the amount of batter I put in the tins. And possibly make a double batch. Even The Ballplayer whom may be the pickiest eater in the world ate at least all of them the night I made them. I had to hide a couple to take over to a neighbor the next day. Sad I know.

My favorite part of this recipe is that it is a cheater recipe! It is made with a box mix! We all know I can not bake a cake homemade if my life depends on it! I haven't the patience! This is a toss it in the bowl, whip it together, frost it from a tube and it is perfect!!!


Butterscotch Pumpkin Cupcakes

1 yellow cake mix
1 15 oz real pumpkin (not pie mix)
2 dashes cinnamon
1 snack size applesauce
1 bag of Butterscotch Morsels (half for batter, half for decorating)
1 tub of cream cheese frosting
cupcake tins/papers OR cooking spray

Preheat oven to 350 degrees

really no oil just a snack size of applesauce!!!
I really thought the cupcakes would grow so I sprayed the tin...I didn't need to. I made the tins greasy. Don't make this mistake
add papers. I think I would maybe stick with the papers over foil but these were orange for Halloween and I couldn't pass it up.
In a bowl mix the cake mix, the applesauce, the pumpkin and half the butterscotch morsels.
Yes it was just that easy
I use an ice cream scoop so they are all the same size. If I was to do it all again I would do two scoops
aren't the scoops pretty? They really are cute.
First tray all filled. This is when I wish I had two trays. Into the oven for 20 minutes
Just enough for about another tray

first batch out of the oven and I am dying to try one.
So many cupcakes....so little time to eat them....
ok they are all cooled.
I have enough chips to decorate the tops
which one do I want??
