Chili Hashbrown Casserole


I have seen these potatoes with every name. Texas Taters, Hashbrown Casserole, Potluck Potatoes, or my favorite name-Funeral Potatoes. They feed a crowd, are made with pantry staples and are comfort food at it's best. I add a can of Ortega chilis to mine and sprinkle with some fireman seasoning. They are grub! Make this recipe your own as I've seen them with a cracker topping or even French fried onions.


Chili Hashbrown Casserole
1 bag of frozen shredded hashbrowns
1 cup of sour cream (I am using light)
2 cups of shredded cheese (any cheddar variety will work and I am using reduced fat)
1 can of cream of chicken (or mushroom) soup
1 can of diced Ortega chilis
cooking spray
butter
Fireman's Seasoning or Paprika for top (you can omit)
Dump all the ingredients. Make sure it's a very big bowl.
Mix well
Put into a well greased 9x13 cooking pan
I like to sprinkle some Fireman's Seasoning on top. Paprika would be nice too. You could omit this too!
dab with some butter. You could omit and just spray with some cooking spray.
Bake 350 degrees for 30 minutes or until golden brown.
I like mine crunchy. So I wait until the bottom is brown before removing from oven
Let stand for a minute or two, if you can before cutting.
I can't wait. I have to have some now!

Mmmm omg, I'm just so excited about these potato dishes you have :) I've not seen much like it at all here in Australia so am dying to make these :) Thanks for sharing!!
