Speedy Baked Rigatoni

It's game night again here. It also happens to be grocery day but it doesn't fit into the schedule. So what to make?? Hmmm! It's always tough because the boys would be happy with pizza but my waistline frankly wouldn't. So I need to hit the pantry and find a meal. My freezer always has meat in it. Most homes usually have a pound of hamburger or ground turkey to scrounge up. Tonight I'm making a quick baked rigatoni. One cup of this and a salad and I'm under my allotted amount of calories and I'm full to boot. And its warm and gooey which is needed after sitting at a cold windy baseball game.
Speedy Baked Rigatoni
1 jar of your favorite jarred spaghetti sauce
1 pound of ground turkey or hamburger
1 bag frozen zucchini
1 1/2 cup reduced fat cheese
1 onion diced
1 bell pepper diced
Brown up beat with the diced bell pepper and onion. Season meat with salt and pepper.
Add your favorite spaghetti sauce to the meat mixture.
Mix up the meat sauce mixture. Taste and make sure it is seasoned enough. I always add one tsp of sugar and 1/2 tsp of cayenne pepper. My family likes the kick.
Take your frozen zucchini and dump in the colander. When you drain the pasta, the hot water will defrost them
Add noodles to the pan with the sauce. Toss and put into a greased casserole dish.
Cover with 1/2 cup of cheese
Bake 350 oven for 30 minutes
Warm and Gooey! Let cool a minute before serving.

This was more than enough for the three of us (the girls weren't at home) and in fact was too much. I froze the leftovers and it made for quick lunches or a snack for the Ballplayer!
