Herb Boiled Potatoes

On busy nights it is imperative I get wholesome foods to the table even though we are incredibly busy. This happens to be an easy way to make potatoes and I use herbs from my garden. Make sure you cut the potatoes small enough that they will cook fast but large enough that they hold their shape while spooning in a little light butter. The Fireman likes this because it is like mashed potatoes yet doesn't have the fat of all that cream and butter.


Herb Boiled Potatoes
4-6 large red potatoes
1-2 Tb of fresh chopped herbs (I am using rosemary and parsley)
2 TB light butter
salt and pepper to taste

Boil potatoes. Yes it is that easy! When fork tender, drain them and return them to the pan I'm using herbs from my kitchen window and my garden.My family doesnt like too many herbs in the potatoes. Chop up finely Add butter (light butter) herbs and salt and pepper.Stir to coat

Yum! Potatoes are pretty much my favorite food and these sound great!
