BBQ'd Baked Potatoes

It's no secret...I heart potatoes. This is one of my favorite ways to make potatoes when The Fireman is grilling. It is fast (thanks to the microwave) and smokey (thanks to the BBQ) and your family will love them. Now, for me, I like them crispy. So I tend to leave them in the BBQ pit longer than most will. You don't have to wait for summer to make this recipe. You can make this in your fireplace in the dead of winter. You get the same smokey flavor.

BBQ'd Baked Potatoes
6 large red potatoes
cooking spray or olive oil
salt and pepper
aluminum foil

wash the potatoes and place on a plate and pierce with a fork (or in my case stab with a knife) then microwave for 7 minutes. This is to pre-cook them. The BBQ will finish the process.
Place each potato (or 2 if they are small like mine) on a sheet of aluminum foil
Spray each potato with some cooking spray or rub with olive oil. Sprinkle both sides of potatoes with salt and pepper. I prefer kosher salt.
Wrap the seasoned potatoes up.
Potatoes and Steaks are ready for the grill!
Place the wrapped potatoes on the coals. Cook your dinner as usual.
Looks like The Fireman got some ash on the plate! Ashes are optional and not necessary for flavor. Transfer the foil wrapped potatoes to a serving plate...or bowl
Now are these not yummy looking?
