Grilled Bacon and Cheese Sammies


Tonight on the way out the door to The Ballplayer's practice, my boys requested grilled cheese sandwiches. Grilled cheese!!! To the low carbing mom? Are you crazy? I would kill for bread! Then to just put the nail in my coffin, The Fireman yells out "How about some bacon on them too?" Man, you are killing me!!

But how can I say no? And so I don't. Into the oven goes some bacon. If you didn't know, I really prefer making bacon in the oven. Here is the link to making bacon in the oven.
Preheat your griddle pan on medium high.
First thing I do is line the counter with the bread. Cover with butter.

The Fireman likes mayo on his. Something his Granny did. I like to sandwich the butter sides together so I don't get the butter on the counter. Add the mayo on the two sandwiches for The Fireman.
Start assembling them.

Add bacon. Here is where I start thinking that I really should have made more bacon.


Add the cheese. I like to buy the block cheese and cut it myself. This makes it cheaper and I find that it tastes better than the pre sliced cheese.
Grill until ooey gooey.

Serve with soup...or if you are as lucky as I am you get Marinate vegetable salad with cold cuts. mmmmm good!
