Sun-dried Tomato Angel Hair Pasta


I have gone on a tangent the last couple years over buying processed food. I wont even bore you with the details but in my tangent I have been working on replacing those box noodle side dishes with my own version. No powdered seasoning packet need apply. This happens to be my favorite version. I am crazy over sun dried tomatoes and cheese mixed together. This one makes enough for four as a side dish. It is not low carb nor is it low fat which is probably why I like it.

Sun-dried Tomato Angel Hair Pasta
1/2 box angel hair pasta
1/2 jar or 1/2 cup julienned sun dried tomatoes (leave the oil out of this recipe)
1 cube of cream cheese
1/2 tsp garlic powder
salt and pepper to taste

In a little sauce pan combine the cream cheese, sun dried tomatoes and the garlic powder. Heat together until it all melts into a sauce. This is best done over a low heat.

Cook up Angel hair while cheese sauce warms up.

Mix all together and serve
