Low Carb Chicken & Chili Casserole




Today I alphabetized my recipe link page. Wow!! Boring!! It so needed to be done though. In the process I made a low carb category which is completely up to interpretation. I found that artichoke dip is low carb (of course the tortilla chips are not) and it got me craving it. So I came up with tonight's dinner from it...sorta. Some of the players have been switched out but the main idea remains. While mixing it up it smelled so good. Really. I don't think I've been this excited about dinner since the last time I ate potatoes.

Low Carb Chicken & Chili Casserole

1 cube cream cheese (softened)
1 lg can Ortega chilis diced
2 cups cooked vegetables (I used broccoli and cauliflower from last nights dinner)
2 cups of chicken breasts chopped (cooked, and I used 2 breast from last night that were monsters)
2 TB Mayo
1 cup (or handful) of cheese

Mix all completely and turn into a casserole dish. Top with cheese

Bake at 350 for 30-45 minutes

Serve with a salad.


For you non low carbers;
if my husband was home or the kids showed an interest I would have placed in individual pot pie dishes and covered with pie crust or puff pastry. Enjoy!!

How big is the "cube" of cream cheese? This looks and sounds really good and I am supposed to be watching my carbs. Thanks for the post.
