Taco Salad


Taco Tuesday is still in full effect in our house. This Tuesday it was HOT here on the West Coast. We didn't get much of a summer so the heat is something we are all of a sudden unaccustomed to. The Ballplayer was craving tacos. I, on the other hand was threatening to sit in the freezer and eat ice cream. Yes, in the freezer. Good thing I dont fit in out freezer and sweets really aren't my thing. But tempting with the current weather.

Taco Salad is very easy to make. Make some Hamburger Taco Meat. This meat is very simple and just as favorable with out the taco seasoning packet. I promise!

Next, take your taco toppings and pile on top of salad. If you have one of those taco bowl makers, I envy you! I dont but will some day. I like to put refried bean, tomatoes, avocado, green onions, taco meat and cheese right on the lettuce. Sometimes I trade out the refried beans for black beans. Spoon some Homemade Salsa right over it all . So healthy! Well, until I fried up some corn tortillas into crunchy strips. Carbaholic here! Very satisfying! Give it a try!
