Cajun Shrimp Alfredo


So our computer took a jump and landed head first on the tile. Very unfortunate for us. We are very dependent on it. My blog went unfinished for two weeks. I had a couple stored that I tried to stretch out but ultimately it wasn't enough. It was especially stressful for me knowing that I need to be working on all my thanksgiving posts. Can you believe that it is the holidays again? It just goes by way too fast. Another stress is that I finally committed to my low carbing. For real. No really. Five pounds down already. It's gonna be hard with all the cooking I'm going to be doing in the up coming weeks. So I will try to show you my low carb switch up on family meals. And for the record, potatoes SHOULD NOT BE CARBS!! I'm very resentful about this. You can have the bread. I'll gladly give up rice. Pasta I might miss, but take it! But potatoes?? So tonight we are having Cajun Shrimp Alfredo. It's pretty fast to make especially using shrimp and angel hair pasta. The Fireman and I are having ours over broccoli. I must admit though that I didn't have any fresh broccoli so I resorted to the frozen variety. We all agree that that wont happen next time. I use mostly the ends and hardly any of the stalk, and this seemed to be all the stalk. I was starving so obviously I ate it. The Fireman ended up grabbing some pasta. This is always my biggest complaint. He cheats on Low Carb. Brat!


Cajun Shrimp Alfredo

1 clove of garlic minced
3 TB butter
2 TB flour (I know its not allowed on low carb but too bad)
2 cups of milk
1 1/2 cup freshly grated Parmesan Cheese
6-8 Large shrimp per person or 1 bag of frozen
Cajun seasoning
olive oil or PAM spray

Start a pan of water to boil. DO NOT ADD THE NOODLES YET!!

Take your shrimp and pat dry. I like to use an old cake tin. Dump them all in the tin and sprinkle the seasoning all over the shrimp..

Take your milk and put in a microwave proof container and pop it in the microwave for two minutes. This doesn't warm it really but gets the chill off.

heat a frying pan with a TB of oil or spray with some PAM cooking. Once it is smoking hot, add the shrimp. It doesn't take very long to cook them, a couple minutes tops. Transfer to a bowl or a plate and cover with foil.

I like to wipe out the pan with a paper towel and use the same pan for the sauce. Less dishes if I am the fool doing them. If the girls are doing them, all bets are off if the girls are in charge of dishes. Paybacks are a Biatch!
Melt the butter over medium heat and add the garlic. Let cook until just about to add color.

Once the garlic is perfect, add the flour and mix with a whisk. Keep it moving. I like to let it cook about 30 seconds to get that flour taste out.

Now slowly add all the milk while whisking continuously.

Keep stirring until it is thickened. My Gram used to say to take a wooden spoon and coat it with the mixture, if you can draw a line down the back and you can see the line then it is ready to add the cheese.
Add the noodles to the pot.
Add the cheese and keep stirring. Turn it down to low and stir it occasionally while waiting for the noodles to finish. Remember that Angel Hair pasta cooks really fast.


Serve the sauce over the pasta (or vegetables as we are doing) and place the shrimp on top.
