Breakfast Scramble


There is nothing more comforting to my kids as having their mom make breakfast. I dont know if it is because I neglect to make breakfast that often or it's just the warm food in the morning when not expecting it. It always starts the day off just right for them.

This morning I made a simple Breakfast Scramble. Nothing crazy, just one potato, some leftover hot sausage and half dozen eggs. Yet it made The Ballplayers day and he was in the best mood for it. You can add or take any of the ingredients out. If you are watching your carbs, leave out the potato. You can add veggies. I love mushrooms and bell peppers but that would have changed my Ballplayers mood so they were left out.

Breakfast Scramble
1 large potato, scrubbed and cubed
1/2 package of Jimmy Deens HOT sausage
6 eggs beaten
salt and pepper
optional cheese for top (about 1/2 cup)

lightly oil the saute pan and start browning the potatoes. I like to spice them up but you can use whatever you like. Salt and pepper would be just fine.

when they are about halfway done, add the sausage


turn the heat to medium low and add the eggs as soon as the sausage is cooked thoroughly

Keep stirring until eggs are cooked thoroughly but not over cooked. The Tortured Teenage practically likes her eggs to be like browned bits. Yuck! Turn the heat off
Cover with cheese (in this case, I am covering half with cheese...cheese hater returns!) Cover with a sauce pan while grabbing the plates or bowls.
I like to garnish with 1 sliced green onion. Obviously My Ballplayer doesn't share my enthusiasm for them. Shame!
