Panko Fried Chicken Sandwiches with Honey Mustard


I'm always looking to make items that you would want to order In a restaurant. This is a sandwich I could see The Fireman ordering at a hamburger joint. You will love it not only because you can get this to the table in fifteen minutes but it satisfies that craving for a crunchy chicken sandwich. Honey mystery can be purchased but is so easy to make.

Panko Fried Chicken Sandwiches with Honey Mustard
4 thin chicken breast
2 eggs
1 cup flour
1 1/2 cup - 2 cups of panko bread crumbs
1 tsp Chili oil or hot sauce
Garlic powder Salt and pepper
Oil for frying
Good hamburger buns

First make the honey mustard.

Combine
4 TB of either yellow mustard or Dijon. I'm out of Dijon from yesterdays shrimp.
2 TB honey
2 TB mayo
Stir till combined. Taste and make sure sweet enough and adjust the honey.

Heat oil in a frying pan. About one cup. I heat on high till HOT and then turn down to medium high.

Set up a dredging station using three plates or I use old cake tins. Season the chicken breasts with garlic powder. Season the flour and the panko with salt and pepper. Add one tsp of chili oil or hot sauce to the egg

Dredge the chicken in flour first

Egg

Then panko.

Place carefully in the pan. They will cook pretty fast. Since they are thin, cook till brown and then turn.


Place on toasted buns and top with honey mustard.
