Fried Zucchini


Tonight I made Homemade Chicken fingers and Lemon Roasted Potatoes for dinner. Something happens while I am frying up food. It becomes contagious. What else can I fry up? I start digging in the frig like a bear looking for food. Really I dont need anymore calories on my plate. It's almost a dare. So I find some zucchini in the bin and instantly start thinking I can make them better than that hamburger joint that has us so addicted to the fried zucchini. And I was right!

Fried Zucchini
In a dredging pan dump about one cup of four, 1/2 TB Lawry's seasoning salt and a couple TBs of Buttermilk. Stir up real well. The little bit of milk will make these chunks of flour that will be heaven on your zucchini. Take 1 egg and 1 TB water and mix together. Cut the zucchini in half lengthwise and then cut into strips. At first I was tossing the edges but they fry up just as nice. dump all the zucchini into the egg and coat it real well. One by one dump into the flour mixture pressing the clumps into it. Promise you will love those clumps. Dump into your HOT oil. I'm still frying chicken at the same time. Turn as soon as they brown and turn out on to the cooling rack that is on paper towels.


Serve with your favorite dipping sauce. We lean to Ranch but warmed Marinara would be nice too!

That looks so good! I never get to eat fried foods and that looks so-o-o-o-o yummy!
