Drunken Chicken



"Excuse me mam, do you know where your chicken has been?"

"Why yes! Drunk from wine!"

It's another desperate meal tonight! I need to grocery shop but it's almost a dare at this point to see how far I can stretch my pantry. This meal reminds me of Scampi except it's with red wine and I'm lacking fresh vegetables in the worst way. It also reminds me of Coq au Vin but I'm lacking mushrooms. I'm sure I will be shot for even making that comparison.

Drunken Chicken
1 LB chicken breast tenders
1 TB butter for frying
3 TB butter for sauce
1 cup dry red wine
4 cloves of garlic minced
1 red onion minced (about a 1/2 cup)
flour for dredging
1 lemon cut in half
1 tsp red pepper flakes (it's not spicy! I promise)
1 box of Angel Air Pasta

Start boiling water for the Angel Hair Pasta but dont toss the pasta in until the meal is done. It will cook that fast.

Dredge the chicken in flour that has been seasoned with some salt and pepper.


Melt butter and a swirl of olive oil in a frying pan.

Fry up the chicken and set aside.
Dump onions and garlic into the pan and cook until translucent.

Add the red wine. Let cook down for a couple of minutes. Add salt and pepper to taste and add the chicken back into the pan. I love how it stains the chicken.

Serve over the Angel Hair Pasta.
