Warm Potato Salad

When it was just my father and I living together (gosh I was 12) there was this little deli within walking distance of our apartment. Ursula's!!! Only a handful of locals remember it. My husband definitely does. They made the best deli sandwiches. Both of us seem to remember the German Potato Salad the most. For me, I had never had it before Ursula's. It wasn't made at my Grandmas. The vinegary taste was so appealing to me. I would ask for a couple dollars and go straight there for lunch. Unfortunately Ursula's is no longer open. I have no idea what happened to it or if it is in another location. I can however make their salad. We are having Twice Baked Corned Beef tonight. This potato dish will pair perfectly with it.

Warm Potato Salad
4 cups sliced cooked potato
5 slices bacon, diced and cooked until crisp
2 TB bacon drippings
1 red onion sliced
1 1/2 TB flour
1/2 cup cider vinegar
1 TB sugar
1 TB mustard
1/2 cup water

Cut the potatoes into round slices. You could do chunks but I remember Ursula doing rounds and we can't mess with my memory. Cook till tender. Drain off water and set aside.

Normally I like to cook bacon in the oven but this recipe requires the drippings. So I cooked it in a pan which I HATE but the alternative is cooking it in the oven and maneuvering the cookie sheet with bacon drippings to the stove to pour into a pan. Sounds like an accident waiting to happen for me. So I'm begrudgingly cooking it on the stove.

Save enough dripping for 1 & 1/2 TB dripping. Cook the onion just until translucent.

Add flour like your making a roux or paste. I always like to let the flour cook for a minute just to get rid of that flour taste.

Add Sugar salt and mustard and then gradually add the vinegar. This is where a friend came over and my photo taking virtually stopped. Oops!
Add the water and keep stirring! Cook until thick.
Add the potatoes and bacon. Let simmer for a couple of minutes.
Serve warm.

Family Friendly Note The potatoes are not too "sour" so I think kids will still enjoy them. Mine do! This dish cooks in twenty minutes and can be paired with other meats. My kids like it just for the fact that there is bacon in it!

Oh my gosh. YUM!! Good thing I have everything on-hand cause I am now craving food from a restaurant that is not only no longer open, but one I've never even been to before!!!

We live a couple of hours from Fredericksburg Texas, which has to-die-for German food. Your recipe has transported me there instantly!
