Pineapple Mango Salsa


This is my favorite for summer. Even the kids will eat it. It plays off the sweet and spicy going together. Highly addictive! So amazingly good for you!!
Pineapple Mango Salsa
2 cups fresh pineapple cubed
1-2 mangoes cubed (I used two but they were small)
1/2 cup-3/4 cup chopped cilantro (a handful)
1/2 cup diced red onion
1 jalapeno de-seeded and minced
Juice of 1 lime
Tortilla chips

Basically you chop and drop it all into the bowl! It really is that simple.

It's so good that The Fireman and I were eating it at the kitchen counter.


Hope you enjoy it as much as we do!! Goes really well on fish tacos too.

Mmmmmm! :) I will for sure have to try that recipe! D you know how long it'll last in the fridge, if I were to make a big batch?

Hi! I would say days rather than weeks like tomato based salsas. Mine gets eatten within two days. I try to plan fish or tacos around the time I make it and there is never enough left over. Are you thinking of making it for the Fourth? You'll be fine for that. Just make sure the pineapple or mango isn't overly ripe so it doesn't spoil.
