French bread cheese pizza

Nobody likes leftovers. People don't want to eat them or even read about them. There are a couple meals my family will eat as leftovers; any pulled meat sandwich, enchiladas, and chili. This meal you can fool your family over. We have a lot of BBQs. French bread is always served. I always have leftover loaves. Simply I buy too much! I have made snacks such as Ortega Chili Bread but if a quick lunch is what you are looking for, this will make the kids happy.
Pizza is always a favorite in this house. Us adults aren't picky on the toppings but the brats like it simple.

My son really doesn't like the cheese on pizza. Mixing it with the sauce is a winner with him. It's probably the only time he hasn't picked the cheese off.
This is great because you could change it up. The nice part is tossing all the ingredients into a bowl and then spreading onto the French bread. I bake it slow so the bottom crust gets crispy but you could kick the heat up and do it in less time. I just prefer the lower temp and the outcome.

French bread cheese pizza
1 loaf of day old fresh grocery store French bread. (it's cheap and flaky)
1-2 cups jarred spaghetti sauce or your favorite leftover homemade
2 cups of cheese (I'm using mostly mozzarella and some Parmesan)
Olive oil to oil the cookie sheet

Shred the cheese.

Add the sauce until it's covered but not soupy. Think dip consistency.

Spread over the halved French bread.

Oil the cookie sheet with just enough to cover the surface. I take a napkin and wipe it so it's even. Place French bread pizzas on the cookie sheet. Bake 25 minutes at 325 degrees
Then kick the broiler on for a couple minutes

Slice up but wait a minute to eat. You don't want to burn the roof of your mouth.
