Chicken and Apple Salad


I'm not sure why longer days make me long for salads. And I'm not talking about plain Jane salads. We eat those year round. One of my all time favorite salads is chicken and apple salad. My brats won't touch it. It has stinky blue cheese. Sometimes I put candied walnuts on it. Topped with my home made Honey Dijon dressing. Add a nice Pinot Grigio and call me happy!

Chicken and Apple Salad
Make 4 servings
1 package Blue cheese crumbles
2 small Granny smith apples quartered and sliced into small slices
Grilled chicken
Baby greens
Candied walnuts

This is too easy. You could use leftover chicken. I am cooking up some chicken breast tenders with just salt and pepper. They cook up quickly and are perfect for slicing into chunks.
Arrange salad on each plate. Cover with 2 TB of Blue Cheese, handful of walnuts, one quarter of the apple, some chicken.
Squeeze lime over the apples.
Top with the following dressing;
Honey Dijon Vinaigrette
1/3 cup Balsamic vinegar
1/4 Vegetable oil
2 TB honey
1 TB Dijon
1/2 tsp oregano
Salt and pepper

Taste and make sure its perfect.

Amen to the pinot grigio!

Chicken and apples are so good together. Almonds would probably taste great in this salad too.
