Apricot Chicken


There are chicken dishes I make that are complicated, taking hours to make. Totally worth it but a labor of love. Then there are chicken dishes I make that are no work. NONE. The Fireman BBQ's them and I provide the sauce. And this time it is as easy as opening up a jar. So why would I bother to even show you? I mean this isn't being a foodie? Right? It is that good and everyone should race out to their store in search of the sauce. I want to buy it by the case. In fact I buy every bottle every chance I find it. We use it in the summer like a child uses ketchup.

I use this sauce on another recipe. A secret recipe that The Fireman won't let me share on my blog. But I was sharing it with a high school friend that lives clear on the other side of the country. She used one of the ingredients on chicken. Raved how much her kids loved it and history was made. We had to make it. And often.

Most people are not sauce fans, unless you live in the South. Central Coasters (that's on the West Coast) do no like sauce on their meat. They pride themselves on using Susie Q seasoning and cooking over oak firewood on BBQ pits. So to ruin a perfectly good piece of meat with sauce is a sin. But I insist on doing it and to make matters worse I do when we are having company over. I'm a rebel! I enjoy seeing their faces and the expressions of enjoyment.

OMG...I am a sauce person, keep the trendy dry rubs...just slather it on!!!!
this look soooooo good! The apricot is such a wonderful compliment to the chicken, maybe a little fresh fruit salsa and were in business!
