Lemon Roasted Potatoes


When I cook with lemon, I find I want to incorporate it into the whole meal. Lemon is so fresh, so spring like that the scent is infectious that it has to be used in everything. The Lemon zest in this recipe really makes the potatoes come alive! You do not want to leave it out! We have a lemon tree in our front yard. It never seems to have lemons on it when I need them. In fact, today I needed a lemon for Lemon Roasted Potatoes and actually had to run to the corner store to get one.

Potatoes are appetizing any day in my opinion. I don't care what you do to them, I am on board! The Ballplayer is not so enthusiastic about potatoes. I keep reminding him that he is Irish. We love potatoes. It's like an Italian not liking tomatoes. What is he thinking? A Russian not liking Vodka!! Hello!! He obviously missed the memo!

Lemon Roasted Potatoes
1 Lemon zested
1 TB Oregano
olive oil
Lemon Pepper Seasoning
5 medium potatoes cut into wedges

Preheat oven to 425

Arrange potatoes in a single layer on a cookie sheet. Add zest of one lemon to the potatoes. Sprinkle Lemon Pepper Seasoning and Oregano over potatoes. Drizzle enough olive oil to coat potatoes. You dont want them to stick.

Bake for 30 minutes or until golden brown, flipping half way.

Consider making a second tray! These will not last long!

I agree - I love anything potato, and I adore lemon (it's the cake I ask for on my birthday, even). I don't think you can go wrong with this recipe either. YUMMY!!!

i love lemon pepper, but i never thought of using lemon zest...what a great idea!! I bet it really perks them up!! thanks for sharing
