Potato Salad



Any and every picnic I've ever gone to has always had a good potato salad. I like mine homemade personally. The Tortured Teenager will eat any store bought version. My homemade is always the same basis. Sometimes I add to it or from it but the sauce is always the same.

I always start with 8 potatoes for my family of four. Peel and clean. Then cut into one inch chunks. Very important to be consistent on size so they cook all the same.

I boil with salty water. When you can insert a fork into them, they are done. Very important! Fork! Not knife!

Drain the potatoes and let sit while you make the mayo based dressing.

Take 1 1/2 cups mayonnaise (use regular. I know it's fattening but the reduced fat is sweeter and the flavor is wildly different!
Add 1 TB rice vinegar, 1 TB yellow mustard, to a very large mixing bowl
Add 2 green onions
1 hard boiled egg diced

4 Stacker's Pickles diced (you could substitute dill relish but I rarely ever have relish and always have Stackers for sandwiches

1 tsp kosher salt and 1 tsp pepper. We like ALOT of pepper in our potato salad. I don't want to re season at the table so I want it right before I plate. Add 1 TB dill. Yes, dill. It's what makes my potato salad different. It makes it taste fresh. You won't regret it.
Add potatoes and mix well.

Taste it. You need to make sure it's seasoned right. Mines perfect!! In fact, I'm swatting The Fireman away! It needs to cool in the fridge! I sprinkle paprika on the top. It's what my Gram did so I have to do it.

Let it cool for at least three hours. Mine cooled for four. The Tortured Teenager threatened to eat it after two. "Quality control" she claimed!!

I make different kind of potato salads.But my favorite is,herbed potato salad,post the recipe yesterday.I also like Russian Potato Salad with peas and carrot.

Mmmm, makes me wish it was summer picnic time already!

My potato salad always has dill in it, too. In fact my recipe is pretty similar to yours minus the pickles. And I use red wine vinegar instead of rice vinegar, or apple cider vinegar if I'm out of red wine vinegar.

I will have to try it with red wine vinegar! I always use rice vinegar because it is so mild. Thanks for the tip!

There isn't a potato salad I don't like! Yours looks super. I'll take it with mayo, with vinaigrette, with mustard, with sour cream - I'll take it every and any which way it comes. Gimme some o that!

looks yummy! One of my favorites. I always cook my potatoes in a big pot with the skin still on, then once they are cooked I peel and cut them. Just the way my mom taught me.

Looks yummy. I will try it. But, I am partial to mine which has sweet pickles, then you use pickle juice with the mayo and mustard. My Mom taught me to do it that way.
